"AMATRICIANA"

INGREDIENTS

4 people

400 gr of MAFALDINE, TRIPOLINE or BUCATINI
150 gr of bacon or pork bacon
3 ripe tomatoes
1 red chilli
40 gr of grated Pecorino Romano
Salt and pepper

PREPARATION

15 minutes preparation + 10 minutes cooking

Cut the bacon into slices and then rectangles, put it in a pan and, with very little water, melt the fat. Then remove the bacon, add the peeled tomatoes in fat, deprived of their seeds and cut into pieces, season with pepper crumbled, just add salt and pepper.

Cook for 10 minutes. Then put the bacon in the sauce, making it just warm. Cook the PASTA in salted water until "al dente", drain and toss with cheese and sauce. Mix well and serve hot.
